The Evolution of Bingsu

Traditional patbingsu (팥빙수) has humble origins as a simple combination of shaved ice, sweet red beans, and rice cakes. Over the decades, it has evolved into an art form, with modern variations featuring everything from fresh fruit and condensed milk to matcha, chocolate, and even cheese.

What makes contemporary bingsu special is the ice itself. Unlike traditional shaved ice that can be coarse and icy, Korean bingsu uses milk-based ice shaved so finely it resembles fresh snow. This creates a melt-in-your-mouth texture that's less about cooling down and more about experiencing pure, creamy bliss.
